Hi everyone, hope you’re all well! I can’t believe it’s almost May already! This past couple of months have flown by. It was my birthday the week before last and my husband had some time off work. In lieu of cake, I had Brownie Brittle as I adore the crispy edges of brownies. So what could be better than an entire sheet of brownie edges?!

We actually got a load of stuff done around the house during our time off as we had a skip to clear out some stuff. We went through our garage, organised it, got rid of the old gravel around our house, had my brother over to board the rafters in our garage for double height storage. Then we cleared my parent’s loft of my stuff from childhood and cleared the conservatory. It had overflow from a badly organised garage. Once cleared we made an extra play area for the kittens in the conservatory, which they love!

Our next job was to order new gravel for the front of the house. It arrived last Thursday and we did it over a couple of days. It looks SO much better than before! All we need now is our new front door and the front of the house will be done. We’ve got a new sign, new light, sign on the side of the house, it looks so good!

We weren’t going to extend this house, but it now makes sense as the value of the house has shot up loads in the last year or so. We’re going to knock down the conservatory and do a full width extension with bi-fold doors, a wood burner, bigger kitchen etc. The room our kitchen is in is already pretty big, but the layout is truly terrible. It makes no sense whatsoever.

The opportunity to double the amount of storage in the kitchen is too tempting. My husband has also wanted a log burner for years as well, so we’ll have a seating area out there too.

After the extension we’ll get a new garage door to match our front door as well. We were going to get it now. However, dad said wait, as they will be in and out of the garage with tools and it might get damaged.

Dad is doing much better thank goodness. He’s been up and about more, walking every day, eating better, driving again. He went to some work meetings and went back to work on Monday. Everything seems to be healing well and we are so glad.

LET’S TALK ABOUT HOW TO MAKE THIS INCREDIBLE BROWNIE BRITTLE!

I don’t know if you’ve ever seen bags of Brownie Brittle in Costco, but we did a couple of years ago and as soon as I tried it, I was hooked. Unfortunately, like a lot of things, once you’ve seen them once or twice in Costco, you don’t see them again!

So, I decided to make my own and let me tell you, it’s just as delicious as the shop bought! I made my version dairy free, but you don’t have to. It’s a pretty basic batter, spread thinly onto a baking tray and baked until crisp all over.

I made sure to add plenty of chocolate chips as well, I wanted chocolate upon chocolate in every bite. You can add all milk/dark/white chips, but I did a mixture of milk and white.

You don’t need an electric mixture or anything to make this batter. Just a bowl, whisk and spoon/spatula. To begin with you whisk vegetable oil, sugar, eggs and vanilla together until smooth and slightly frothy. Then add in melted chocolate, mix until smooth. Finally, mix in flour, baking powder, salt, and cocoa powder.

Once mixed, tip onto a baking tray prepared with grease proof paper and spread into an even layer. I made my Brownie Brittle around 1/4 inch thick. You can make it anywhere from 1/4-1/2 inch, but this will alter the baking time.

If you only have small baking trays, I’d advise splitting the batter between two trays, to ensure you can spread it thinly enough. I sprinkled dairy free chocolate chips over the brownie batter and then placed in the oven to bake. It will take around 20-25 minutes. Your brownie brittle will be ready when the edges are crisp, the centre firm to the touch and the whole tray has a crackly top.

As soon as you remove from the oven, use a pizza wheel or large knife to score the brittle. I went diagonally across the tray, both ways. You want to make sure you do a decent score, make it deep enough that you’ll be able to break into pieces once cool!

Ingredients
  

  • 1/3 cup (80ml) vegetable oil
  • 3/4 cup (150g) caster sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 3 oz (85g) dairy free dark chocolate, melted and slightly cooled
  • 1/2 cup (70g) plain flour
  • 3 tbsp cocoa powder
  • 1/4 tsp baking powder
  • Pinch of salt
  • 2/3 cup (116g) dairy free chocolate chips, your choice; I did a mixture of milk and white

Instructions
 

  • Preheat the oven to 180C/350F and line a large baking tray with grease proof paper.
  • Place the oil, sugar, egg and vanilla extract into a large bowl and whisk until well combined and slightly frothy.
  • Add in the melted chocolate and mix until everything is well combined.
  • Add in the flour, cocoa powder, baking powder and salt and mix until there are no lumps of flour and everything is smooth and combined.
  • Tip the batter onto your prepared baking tray and spread with a small angled spatula to 1/4-1/2 inch thickness. If you don't have large baking trays, I would advise you split the mixture between two smaller baking trays to ensure the Brownie Brittle is thin enough.
  • Once spread, sprinkle the batter with chocolate chips. Place in the oven for 20-25 minutes, until the top is crackly and firm to the touch and the edges are crisp. Mine, at 1/4 inch thickness, took 23 minutes. If you're using two trays, keep a close eye on it and check around 15 minutes.
  • Remove from the oven and score with a pizza wheel/long knife. I cut diagonally both ways and ended up with around 24 pieces, 2 inches across. Leave to cool before breaking up into pieces and enjoying.
  • Brownie Brittle will keep in an airtight container or Ziploc bag, at room temperature for 2 weeks.
