Hi everyone, hope you’re well and had a good weekend. We spent the weekend clearing out the office because my husband has an issue with keeping boxes and packaging from things we bought years ago! He also seems to collect cables and old computers…

It felt like such a weight off my shoulders when we got back from recycling it all. The declutter is in full swing and we have lots to do! I am someone who needs neat and tidy spaces. If I’m in an untidy, cluttered room I can’t focus and it makes me feel so stressed and tense.

My husband, however, would live surrounded by boxes and computers if I wasn’t here to clean up and make him throw things away!

Now, let’s talk about this Apple and Raisin Granola. There’s nothing better than homemade granola for me. So many in the shops have nuts in and I’m allergic, so I like making my own as I know exactly what goes into it.

I also think it tastes much better than shop bought. Does anyone else find granola addictive? Like, once you start you can’t stop? I just keep eating it, it’s dangerous!

This Apple and Raisin Granola is so easy to make and just delicious. You need a bowl and spoon and you can mix everything by hand. Then you just have to tip it onto a lined tray and bake it for 35-45 minutes.

I used maple syrup in this recipe. I know that honey is normally what is used in granola, but I’m allergic to that as well, so I have to use an alternative.

As well as using fresh apple in this recipe, I also added applesauce to really ramp up the flavour. A little veg oil finishes off the wet ingredients. The dry ingredients are oats, cinnamon, chunks of apple and raisins.

It’s honestly so simple to throw together, yet the result is delicious, crunchy, flavour filled granola. The raisins burst in your mouth and the apples are soft and sweet. So many amazing flavours going on!

Homemade granola keeps well too, you could make a batch of this at the weekend and then have breakfast ready for the whole week. You can serve this Apple and Raisin Granola with milk or yoghurt.

I love to serve it with natural yoghurt as the granola stays crunchy but it’s completely up to you. You could sprinkle more cinnamon on it, serve it with more fruit. There are so many possibilities.

Ingredients
  

  • 3 cups (240g) rolled oats, not quick cook
  • 2 tsp ground cinnamon
  • 2/3 cup (108g) raisins
  • 1 large apple, cored and diced, leave the skin on
  • 1/3 cup (80ml) vegetable/sunflower oil
  • 1/3 cup (100g) applesauce
  • 3 tbsp maple syrup or honey
  • 1/4 tsp vanilla extract

Instructions
 

  • Preheat the oven to 160C/325F and line a baking tray with grease proof paper/a silicone mat.
  • Place the oats, cinnamon, raisins and diced apple into a large bowl and toss to combine.
  • Add in the vegetable oil, applesauce, maple syrup and vanilla extract and stir until all of the oats are coated in the liquid. Some large lumps may form, this is fine.
  • Tip the mixture onto your prepared pan an spread into an even layer.
  • Place in the oven for 35-45 minutes until golden all over and firm to the touch. Every 15 minutes, give the mixture a quick stir/turn to make sure it browns evenly.
  • Once cooked, leave to cool on the tray completely. Once cool, store in an airtight container, at room temperature, for a week.
  • You can serve this granola with milk, yoghurt, fruit or alone as a quick snack!
