These Peach Parfaits are made with creamy Greek yoghurt, sweet peaches and crunchy granola; light and tasty, you decide whether these are breakfast or dessert!
It’s been such an exciting few weeks in the AN household; I’M AN AUNT! My brother and his girlfriend welcomed a little baby boy into the family almost two weeks ago and I went and met him when he was just a couple days old. I’ve never been around babies and I’m not really maternal at all, but when I held him I just kept looking at this tiny human completely in awe of him! His tiny fingernails, his little yawns and even his hiccups were ridiculously cute!
It was a complete surprise when my brother told us last year, but my family (as in me, my parents, brother and grandparents, not the wider family) have been so excited and supportive since we found out; it’s such a shame that not everyone was as excited when told. I mean it’s a new life, that’s a happy occasion, right??! Unfortunately, it seems some people insist on trying to put a downer on things, so it’s a good job we don’t let other people’s opinions affect us.
Anyway, more exciting news! – We have a venue for our wedding party!! I’m so relieved! That’s one more thing ticked off the list.
It’s a beautiful barn, very traditional and they are fine with the fact we just want a party and not a whole reception. Honestly, it was a complete fluke that we found this place. We spent hours over the past few weekends looking all around from near us, all the way around the M25 to my parents and we weren’t finding anything suitable. As we were getting more and more exasperated, this place popped up and Mr AN and I were like “this is perfect!”
Some places we saw were barns from the outside, but then I saw the pictures of inside and they just didn’t look traditional enough. They had proper plastered walls; I knew I wanted a barn with all the exposed beams etc.
Some of the barns we were looking at were beyond expensive for one night too! If we were getting married here then yes, of course, I would pay whatever for the right barn, but since we aren’t I can’t justify spending thousands and thousands on a party venue. It honestly doesn’t matter to me that we can afford it, I simply cannot justify it in my head. I’m spending most of our budget on the actual wedding because I want it to be awesome and something everyone can look back on with great memories!
As for our party, I’ve got nothing to prove to anyone and I’m not someone who is like “come and look at how much I have” – I just want a relaxed party with food and music, where we can chill with our friends and family and celebrate the fact we got married! Finding this barn is just perfect.
NOW, onto dessert, or maybe breakfast? These Peach Parfaits have granola and yoghurt in, so I’m thinking breakfast!
I mixed a little double cream in with the Greek yoghurt to add a little more creaminess (and naughtiness) along with vanilla and agave to sweeten it. You can of course use honey to sweeten your yoghurt, but this would kill me, so I used agave.
I then cut up fresh peaches into small chunks and layered them with the yoghurt before sprinkling on some granola to add a little crunch to what would otherwise be quite a soft dish.
Honestly, these Peach Parfaits are divine! So light and creamy, but then you get the chunks of sweet peach and then the granola? Oh my goodness, the cherry on the top of these awesome parfaits!
I wanted to share one more no bake, easy recipe before I take some time off for Summer! Yes, the schools here have broken up which means it’s officially Summer and I’m going to wind down for a few weeks before getting back in the kitchen and focusing on all things pumpkin and apple! I can’t believe Autumn is almost upon us, it’s by far my favourite season!

Peach Parfaits
Ingredients
- 1/2 cup (120ml) double/heavy cream
- 1 cup +2tbsp (290g) plain Greek Yoghurt
- 3 tbsp agave nectar/honey
- 1 tsp vanilla extract
- 3 peaches, de stoned and cut into small chunks
- 1/2 cup (55g) plain granola, or one with seeds/nuts, I just can't have them as I'm allergic to nuts!
Instructions
- Place double cream into a medium sized bowl and whisk until soft peak stage. You want it to hold its shape when you pull the whisk out, but for the peak to fall over when you pull the whisk out.
- Add in the Greek yoghurt, agave/honey and vanilla extract and fold in until well combined.
- Take 2 mason jars and place about 1/3 cup of the Greek yoghurt mixture into the base of the jar.
- Place 1/4 of the peach chunks on top of the yoghurt mix and then sprinkle with granola.
- Repeat the layers; first the yoghurt mix, then peaches, then granola until the jars are full.
- Serve immediately or cover and keep in the fridge for 2 days.
