So the other day I had a request for a key lime pie as the other half really likes the GU ones from Sainsbury’s, but only buys them when they’re on offer as they’re expensive!
He did have to buy me the flan tin though 😉
You will need:
> 23cm loose bottomed tart/flan tin
> Butter to grease
> About 3 bowls
From Step-by-Step Baking
Ingredients:
> 100g butter
> 225g digestive biscuits
> 5 limes
> 3 large egg yolks
> 400g can condensed milk
Method:
>Preheat oven to 180degreesC/350F/Gas 4
> Grease the tin, put to one side and, using either the old method of food bag and rolling pin, or food blender, chop the biscuits up until they are fine crumbs.
> Melt butter in a saucepan and then add the crumbs, Stir until combined. Pour into tin and squash down until it covers the base. You can use a wooden spoon, but I find my hands much more useful.
> Bake the base for 5-10 minutes. While the base is baking, grate 3 of the limes into a bowl (the flat parmesan graters with the handles are brilliant for this), if you have a zester you can zest the skin of the 4th lime for decoration 🙂
> Juice all 5 limes into another bowl and put to the side. Separate the eggs and put the yolks into the bowl with the gratings. Whisk with an electric whisker until thickened. Then add the whole can of condensed milk and carry on whisking for 5 minutes.
> Then add the lime juice and whisk until just incorporated.
> Pour onto base and bake for 15-20 minutes. You’ll know it’s done when it’s set, but when you nudge the tin it quivers 🙂
