Strawberry Filled Cupcakes with Mascarpone Frosting

My stand mixer arrived yesterday and I, of course, had to play with it as soon as I got it, so my boyfriend asked me to make filled cupcakes with strawberry filling (as I also bought a cupcake plunger!)

Now, people who know me will know I go through phases. It happens fairly frequently. Sometimes it will be The Sims 2 (yes I know, I’m supposed to be an adult), sometimes it will be jewellery making. I always love baking, but in the last few days I’ve been addicted to eBay…

Devil’s Food Cake Cupcakes with Chocolate Buttercream

I’ve adapted a Hummingbird bakery recipe for this one. Don’t worry when you taste the buttercream and it’s not sweet. It’s not meant to be, it’s meant to be a tiny bit bitter I suppose you could call it. I didn’t think I’d like it as I don’t like dark chocolate, but it’s really nice!!

Oven Baked Scotch Eggs

I simply adore scotch eggs, but they’re not friendly to the waistline when they’re fried, so these ones are oven baked. Still yummy and surprisingly still have a good bite like the fried ones πŸ™‚

We seem to be a little addicted to these raisin scones in our house at the moment. The other half likes them with a bit of butter and I go for chocolate spread πŸ™‚

Key Lime Pie for my man :)

So the other day I had a request for a key lime pie as the other half really likes the GU ones from Sainsbury’s, but only buys them when they’re on offer as they’re expensive!
