Raspberry Eton Mess is a twist on the classic. No bake, individually sized and ready in 5 minutes, these are the perfect make ahead Summer dessert for the whole family!
Hiya everyone, hope you’re having a good week. I can’t lie, I’m ready for this week to be over. It’s been a really split week. Before we talk about the recipe for my Raspberry Eton Mess, let’s talk about this week.
The beginning of the week, we lost our cat, which was just devastating. However, the end of the week has brought some relief as something that’s been going on for 7+ months is finally over.
I can’t go into details, but I’ve alluded to the fact before about litigation going on. It’s finally all been settled, which means I can finally move on with my life.
The hurt is still there of course. Being accused of lying, people twisting things and suddenly denying they knew things. But, I just want closure now. It’s taken a huge toll on my health, both physically and mentally. It’s been so stressful and I’ve wanted to give up, but I knew I had to stand up for myself.
I’ve been totally put off working outside the home though. I feel like I would have to permanently record everything, so if someone doesn’t do paperwork or changes what they say, I can prove how it really happened.
I don’t think that would be healthy though, so I’m just going to stay home. I’d only be able to do office based work anyway after all this, which just isn’t me, so yeah…. Staying home forever!
I mean, I only got a job outside of the home because I thought it would do me some good to actually speak to people and not be cooped up all week. Look where that got me. It’s just not worth it to me anymore.
OK, now we’ve covered that, let’s talk Raspberry Eton Mess. I know a “normal” Eton mess has strawberries. Although strawberries are my first love, I wanted to try this recipe with raspberries.
Their tart, but sweet nature lends itself to being the perfect compliment to sweet meringue. It really balances out the sweetness, but still gives you that juicy burst of fruit.
The best thing? They are ready in 5 minutes and are no bake!
All you have to do is whip some cream with a little vanilla and sugar, add in pureed raspberries and crushed meringue, then spoon the mixture into glasses before garnishing with more crushed meringue and whole raspberries.
You can make this the morning of a family gathering and then assemble when it’s time to serve. Or you can make and assemble them 2 hours ahead of time.

Raspberry Eton Mess
Ingredients
- 2 cups (480ml) double/heavy cream
- 1/4 cup (50g) caster/white sugar
- 1 tsp vanilla extract
- 1 cup (150g) fresh raspberries, plus 4 extra for garnish
- 5 meringue nests, crushed – 4 to mix in with the cream, reserve 1 for garnish
- Mint/basil leaves for garnish, optional
Instructions
- Place the cream, sugar and vanilla into a large bowl and whisk until you reach soft peak. You want it to be thick and when you pull the whisk out, it just about holds its shape. You'll be stirring it again in a minute, so it will get thicker. If you whisk to stiff peak and then add fruit and stir it, it will be over whipped. Leave to one side.
- Place the raspberries in a blender and blitz until you have a smooth puree. Reserve 4tsp for garnish, but spoon the rest of the puree into the cream mixture.
- Tip in 4 crushed meringue nests and gently fold into the cream mixture. I think it looks super pretty when the raspberry puree is swirled with the cream and you can still see bits of white, so I only folded until this stage. You can, of course, completely mix it together and have pink cream. It's completely up to you.
- Take 4 wine glasses/glasses the size of a wine glass, and divide your cream mixture between the 4 glasses.
- Spoon 1tsp of raspberry puree over the top, sprinkle with your remaining crushed meringue nest, then place 1 whole raspberry and a sprig of mint/basil into the top to garnish.
- You can make the cream mixture up to 6 hours ahead of time. Leave in the bowl and assemble when ready to serve. You can keep fully assembled in the fridge for 2 hours, however if you leave it longer the fruit puree will soften the meringue on top.
- Raspberry Eton Mess is best eaten on the day you make it, but will keep in the fridge for 1 night. The meringue won't be crunchy though.
