Sorry for the lack of posts in the last few days, I’ve been really busy sorting out all my work from the first year of Uni to take in to my meeting tomorrow. I’m glad that I’m going to go and speak about the course tomorrow, I think it will help me make my final decision as to whether or not I continue studying or start a cake business instead.
We had a very busy weekend apart from that as well! We spent all day Saturday shopping, I bought some new clothes for Autumn. I’ve been looking for the “perfect” pair of jeans for a while now, if they exist! I always have the problem that they fit around my waist, actually they’re usually too big around the waist, but I have big calves because I run, so I always struggle there. Honestly, there is nothing more depressing than putting on a pair of size 10’s when you know you’re a size 10, but not having them fit around my calves. I go home dejected and feeling awful about myself. I think I’ve finally found a few pairs of jeans that are perfect and make my legs look slimmer too!
I have lots of pairs of “jeggings” and find them really comfortable, but I wanted a proper pair of jeans. Admittedly I still had to go for a pair with a bit of stretch, but they are so comfortable! I also managed to get a 25% student discount so they were pretty reasonably priced! Win, win!
I went to see my parents last Thursday as I was having my car serviced. I had a baking day beforehand as I always like to take over some yummy baked goods to my family. Anyway, I made these beauties. They tasted so good they should be illegal… However, I kind of forgot that there was caramel in there and didn’t take into account that the caramel would set once cooled, so I left them in the oven a bit too long. The taste was amazing though, so I’m definitely going to make them again, but take them out of the oven earlier so they are still soft when I take them to my parents!
I adapted a Martha Stewart recipe, I always find her recipes are amazing and this cookie dough was no different, I don’t know how I baked it because I wanted to eat it. Anyway I’m going to share this pure cookie joy with you, so go ahead and make these Rolo cookies! 🙂
Makes 16-20 depending on cookie size.
Adapted from Martha Stewart Cookies
Ingredients:
> 1 stick (113g) of butter
> 1/4 cup caster sugar
> 1/2 cup light brown sugar
> 1tsp vanilla extract
> 1 egg
> 1 cup + 2tbsp plain flour
> 1/4tsp bicarbonate of soda
> 1/4 cup of milk chocolate chips
> 3/4 cup Rolo’s, chopped roughly (measure AFTER chopping)
Method:
> Preheat oven to 180 degrees C and line 2 baking trays.
> Place the butter and sugars in a large bowl or the bowl of your stand mixer.
> Cream the butter and sugars together until light and fluffy.
> Add in the vanilla extract and egg.
> Mix until well combined.
> Add in the flour and bicarb.
> Mix until well combined.
> Chop your Rolo’s up. Yes this is happening.
> Add the Rolo rubble and chocolate chips into your mixture.
> Mix until the chocolate chips and Rolo’s are evenly distributed.
> Using an ice cream scoop, place cookies on your baking tray, 12 to a standard tray.
> Place in the oven for 10-12 minutes, I have quite a big cookie scoop, I’ve been searching for a smaller one for ages, so for me they took 12-15 minutes. However, I should have taken them out a few minutes earlier. They should look slightly cracked on top and be golden brown, but still be soft and look a little under baked.
> Leave to cool completely before placing in an airtight container. Will keep for up to 4 days, they won’t last that long they are UH-mazing!
