Afternoon. It’s been a tough few days for me. I had my hospital appointment and my consultant basically wrote me off as a lost cause despite the fact I’m only 21. He said that I’m not going to get better, only worse and he can only slow down the process. The thing that gets me is that he hasn’t made a formal diagnosis and all he did was prod my back and twist me around and make sure I was in agony before I went home. He is making it sound like some kind of degenerative disease when I have told him many times that I injured my back.
I finally have my acupuncture appointments though and he even apologized for the fact it’s taken so long to get them. He said my vitamin d levels are very low so he prescribed me a really high dose of 40ug a week for three months and then I have to take a slightly lower dose forever apparently. He still seems adamant that vitamin d deficiency is the cause of everything. I can’t take the vitamin d he prescribed though as he wrote on my prescription that I was allergic to nuts and then on my pill box it said “contains peanut oil” so I had to go back and moan and apparently they’re going to “get in contact”. He then sent me for a blood test to check my calcium so that was fantastic. You know I have a tendency to faint at them!!
The lady who took my blood was lovely though and funny! When I said I sometimes faint, she went to tell another person “If you hear me screaming come in, I’ve got a fainter!” She gave me loads of time to lie there and make sure I was fine! Makes a nice change, usually you’re ushered out as soon as the needle’s out.
I’m so fed up of constantly trying to get some sort of relief. I’m still in agony every day and on loads of pills. I’m going to go back to my doctor and ask if I can get a 2nd opinion because I just don’t believe what this guy is telling me.
In other news, I got into my new Uni! 🙂 Received my confirmation email yesterday morning and am going to meet with the new course leader next Tuesday to show her my work. We met back in January, when I went to an open day and she’s lovely so I’m sure it will all go swimmingly. All that’s left to do now is officially withdraw from Southampton and pick up my work. I’ll be so glad to have a lower fuel bill especially as it seems prices are rising again 🙁 I’ll also not have a 6 hour round trip! It will be lovely to be able to cycle some days if I feel like it. My boyfriend’s mind is at ease because I’m not driving 200+ miles a day and he’s happy I now have everything sorted here in Essex. He joked that he’s really stuck with me now, but I know he doesn’t mean it, we have an odd sense of humour…
I love the fact I feel completely settled with him, I can be myself and we can just geek around! We are honestly so silly sometimes…!!
Today’s recipe for pizza bread is a great one for using up leftovers! It’s super quick (maybe not the healthiest ever, but everyone deserves a treat every now and again!) and really tasty.
Serves 2 as a main, 4 as a side
Ingredients:
> 4 thickly cut slices of french/crusty bread (we used “tiger” loaf, it doesn’t matter if it’s slightly past its best either)
> 2tbsp tomato purée
> 1/3 cup tomato ketchup (I always use Heinz)
> 1/2tsp Italian seasoning
> Salt & Pepper to taste
> 2/3 cup strong cheddar cheese
> 12 slices of pepperoni (this worked for our size of bread, 3 per slice)
Method:
> Preheat oven to 200 degrees C.
> Place the bread in the toaster for a couple of minutes. If you just put the topping on bread and in the oven it will go soggy.
> Place the tomato purée, ketchup and Italian seasoning in a small bowl and mix until incorporated. Season to taste if required, it’s pretty darn perfect as it is 🙂
> Grate your cheddar cheese.
> Place about a dessert spoon of sauce on each slice of toast. Smooth it over with the back of the spoon.
> Split the cheese between the slices.
> Place the pepperoni on top.
> Bake in the oven for 7-10 minutes until the cheese has all melted and it’s piping hot. Serve immediately, either alone or try with my homemade wedges.
> You can try this with any number of toppings, we definitely will be!!
