An almost baking fail…

Well, I had a day off from painting today as I’m aching all over and my back has about given up 🙁 For those of you that don’t know, I have 4 slipped discs in my back and have been seeing various specialists, to no avail, about it for over a year now. Didn’t help that I moved house as I was having accupuncture, but am now having to wait again at the new hospital! So sometimes, my back just decides to go of its own accord, but other times it waits for me to do something then it screams at me “Oi, you’ve overdone it a bit” – I’m on so many drugs, my Dad jokes I must rattle when shaken, but they only just about take the edge off. But ho hum, life goes on.

So this afternoon I decided to bake instead. This was a task within itself as all of my baking stuff is piled up in the lounge as I’m still decorating the kitchen, so I had to dig to find my flour.

I had a Pineapple that needed to be used so decided to make pineapple bars, a biscuit base with a pineapple, almost cake like topping. I had seen a recipe for something similar, but basically made it up, I followed the recipes cooking time; biscuit turned out fantastic, pineapple well… looked cooked and was browned around the edges, but a few minutes later some of it sunk and it became apparent it wasn’t cooked. Then I tried it, I love pineapple, but I wasn’t too sure on it to be honest.

I waited for the other half to come home, he liked the taste, but said the texture was funny. I was about ready to give up and say RIP to my pineapple bars, but I put them back in the oven and stood over them watching, hoping, praying…

After another 20 minutes (?!) they were quite a bit more browned, but definitely cooked! The other half tried them again and… success! So, I’ll blog the recipe in the next week or so, and will definitely try again, but maybe with a more tart fruit!

Other than that, not much to report from this end, made a lovely chicken and bacon pie for dinner, recipe to come soon, but not much else! Hope you’re having a good week, another recipe to come tomorrow 🙂
