This Brownie in a Mug is dairy free and ready in under 5 minutes! Super rich, fudgy and decadent, it is the perfect single serving dessert!
Hi guys, sorry for the lack of new content last week. After my post updating you all on my health journey, I just needed some time.
The past couple of weeks have been pretty overwhelming for me. Overwhelming in terms of getting a diagnosis and in terms of the support I have received. It’s been amazing, but scary and also a huge relief. After so many years, it’s so weird having an answer for every single symptom I’ve ever had! I’ve also been dealing with some pretty nasty symptoms for the whole of this year so far. It’s what finally pushed me to getting help as they’re pretty scary.
I’m hoping I can get my conditions under control in the next year or so, so that I can have a better life quality. Until then, it’s about eating right, doing some tricks my specialist showed me and keeping myself active while not pushing myself too much.
Anyway, let’s talk about this Brownie in a Mug! It’s ridiculously simple to make and is the gooiest, richest brownie I’ve ever eaten!
I’ve wanted to make a mug cake for ages as they intrigued me. They almost seemed too good to be true haha!!
I made my first mug cake on Valentine’s Day. My husband wanted cake, but we didn’t need or want a huge cake for the two of us. So, I researched online and made each of us a chocolate chip mug cake. I will be sharing more mug cakes at some point. However, this week I really wanted to share this Brownie in a Mug because it’s the best thing to ever come from my microwave.
HOW DO YOU MAKE THIS PERFECTLY PORTIONED MUG OF DREAMS…?
Well. It’s so easy it’s almost laughable! You just need a big microwaveable mug, a bowl, whisk and measuring spoons.
You probably have all the ingredients already in your kitchen, there’s nothing fancy in there. Of course, you can make it with dairy milk and chocolate if you would rather, I just can’t as I’m allergic.
I used D&D Dairy free chocolate chips and oat milk in my Brownie in a Mug. There’s 2tbsp of chocolate chips in each mug and I sprinkled a few extra ones on the top because half melted chocolate chips are one of the best things in life.
To begin with, I placed flour, sugar, cocoa powder, salt, bicarbonate of soda and chocolate chips into a bowl and whisked until the chocolate chips were coated in flour/cocoa powder.
Then I added oil, vanilla and oat milk and whisked until I had a thick, glorious brownie batter. Spoon it into a large mug, microwave for 60-90 seconds and there you have it. Brownie in a Mug.
Serve it with some ice cream and dig right in. It’s the perfect individually sized dessert for when you’re craving brownies, but don’t want to make a whole pan.
You can also switch up the chocolate chips; try white chocolate or milk chocolate or no chocolate chips. It’s really up to you!
Dairy Free Brownie in a Mug
Ingredients
- 4 tbsp plain/all-purpose flour
- 4 tbsp caster sugar
- 2 tbsp cocoa powder
- Pinch of salt
- 1/8 tsp bicarbonate of soda/baking soda
- 2 tbsp chocolate chips of your choice, I used Dairy free, you can use milk, dark, white or leave them out.
- 2 tbsp vegetable oil
- 2 tbsp milk, I used non dairy Oat Milk
- 1/4 tsp vanilla extract
- Extra chocolate chips to garnish, optional
Instructions
- If your mug is big enough, you can mix this right in the mug, but I mixed it in a small mixing bowl instead. You want a large, microwaveable mug, one that will hold around 1 cup. This will rise and then go down as it cools, so you don't want a small mug where it will overflow!
- Place the flour, sugar, cocoa powder, salt, bicarbonate of soda and chocolate chips into your bowl and whisk briefly until combined and the chocolate chips are coated in flour.
- Add in the oil, milk and vanilla and whisk until smooth and there are no lumps of flour.
- Spoon the mixture into your mug and place in the microwave for 60-90 seconds. My microwave is 850W and it took 75-80 seconds. I placed the brownie in the microwave for 60 seconds, then sprinkled a few more chocolate chips on top for the final 15-20 seconds.
- The brownie in a mug is done when the top is just set and springs back slightly when you touch it. Also, an inserted skewer/knife comes should come out clean. You still want the brownie to look soft and gooey. Don't keep microwaving until it looks dry and solid.
- You can dig straight in, but it will be VERY hot. I like to let mine stand for 2 minutes, then add some non dairy ice cream. Brownie in a Mug is best eaten as soon as it's made, but will keep covered in the fridge overnight. Just reheat for 30-40 seconds when you want to serve it.
